WP6 Economical and social studies on the project
In the main experimental phase of the research project, all the following parameters of a renewed supply chain will be studied, the choice of the most suitable cultivar, the identification of consumers’ preferences, the research of process and technological parameters related to transformation with innovative techniques that preserve the overall quality of product, the research of the most suitable packaging with the highest product-service offering, compatible with the techniques employed and with the strong required design; and also all the parameters related to stability. In addition, the product development, both in terms of choice of ingredients and mixing them with other vegetables, and in terms of marketing presentation, will be studied by quantitative marketing techniques capable of determining the strengths and weaknesses and the "driver" of liking of a highly segmented market in its consumers target.
